Shrimp Linguine


Shrimp scampi over fresh linguine 
3 shrimp per person 
1/4 cup Extra virgin olive oil (enough to cover bottom of pan)
1/2 stick Salted butter
4 cloves of garlic 
1/3 cup of white wine
One lemon
Sea salt & pepper

Combine oil & butter once hot add chopped garlic and sauté,  add white wine and reduce.  Add shrimp, S&P sauce 2 minutes  flip shrimp squeeze lemon juice and add parsley  sauce for another two minutes,  add cooked pasta to pan to get all the great flavor From the pan 



1 scallop per person
2 whole grapefruits
1 bunch of basil 
Sea salt & pepper

Place scallops on a paper towel to absorb any extra moisture. Salt and pepper each scallop before cooking. sear the scallops in a hot pan for 2-3 minutes per side (depending on the size)  do not touch the scallops while searing, they will unstick themselves. squeeze grapefruit into pan and add ripped basil sauce for another minute
Plate scallop on basil leaf and a grapefruit supreme on top
